The Misunderstood One
Kanayamidori was once dismissed. Its aroma — a distinctive, milky sweetness unlike anything in the Japanese tea canon — was considered too unusual, too individual, too difficult to place.
Born at the Kanaya research station in Shizuoka and cultivated primarily in the highlands of Kagoshima and Shizuoka's mountain districts, this cultivar spent years on the margins. Then, slowly, the world caught up. What was once called "too much" is now recognised as irreplaceable.
In the Cup
The first thing you notice is the aroma: warm, enveloping, unmistakably reminiscent of milk and caramel — without a drop of either.
The liquor is deep and rich. A velvety sweetness coats the palate, held in balance by a measured astringency that prevents any excess. The finish is long and contemplative, like the last light of a day you wish would not end.
This is also a cultivar with extraordinary pairing potential. Its caramel and milk-like aromatics stand equal to butter pastries, aged cheeses — even bold blue cheese. 寂 does not retreat from intensity. It meets it.
Why This One
Every collection needs a voice that challenges expectation. 寂 is that voice.
Where 暁 is silence and 陽 is clarity, 寂 is depth — the kind that asks you to sit longer, breathe slower, and release the accumulated weight of your day. We named it Noble Silence not because it is quiet, but because it creates quiet around you.
We chose it as No. 04 — the final expression — because it is the tea you reach for when the journey is over and the only person left to honour is yourself.
