The Beauty of Patience
Okuyutaka is a late-harvest cultivar — while others rush toward early spring picking, this variety takes its time, quietly absorbing nutrients from the earth across the cooler months.
Born from Yutakamidori, one of Kagoshima's finest cultivars, Okuyutaka was bred for the misty highlands of southern Japan. It thrives where the air is cool, the pace is slow, and nothing is forced.
The Japanese have a word for this quality: okuyukashii — a quiet depth that reveals itself only to those who are willing to wait.
In the Cup
The liquor is a luminous, pale amber — almost translucent.
The first note is sweetness: not sugar, but the soft, amino-acid sweetness that only suppressed catechins and patient growth can produce. There is virtually no bitterness. No astringency. The finish is so clean it feels like silence.
Brewed at a lower temperature, the sweetness deepens further — a quiet revelation that rewards restraint.
